In recent years, in a continuous program of reconstruction, Markovitis has gradually vined this area, with the average age of the tree stumps currently being 9 years. The grapes for his rosé are fermented with spontaneous yeasts in stainless steel tanks where the wine also undergoes malolactic fermentation. It is bottled after natural sedimentation and with very low sulphite levels. The winemaking is minimally intrusive and this is possible through the exceptional work and effort put into the vineyard.
