In the traditional copper abysses of the distillery, the solution of alcohol and water, the seeds, the aromatic herbs and the plants of the island remain for hours, together with the famous anise of Lisvori and the unique mastic of Chios. Then, the mixture is distilled slowly. From the distillation, “the heart” is selected. Before the “heart” ends up in the bottles, it is diluted with soft water. The MINI Mytilene ouzo has rightly been characterized as the softest and sweetest ouzo.
